Make homemade sausages with these 33mm Collagen Casings. Makes 15 lbs.
How to Use Weston Collagen Sausage Casings
These processed collagen casings do not need to be soaked beforehand.
Thread the collagen casing over the sausage stuffing funnel of your
Weston Sausage Stuffer
. If you're having a difficult time, it can help to dab the funnel with cooking oil.
Tie the end of the casing into a knot and pull about a half of an inch of casing from the end of the stuffing funnel.
Hold the casing tightly in one hand, and crank the handle of the sausage stuffer with the other hand.
As the casing fills, gently guide it away from the stuffing tube, being sure not to overfill the casing and cause it to burst.
If air pockets form as you are stuffing, prick them with a pin to let the air out.
Once you have reached the end, tie off the end of the sausage and cut off the excess casing.
